Blueberry Cookies | Vegan & Naturally Blue!

Ingredients

  • 135 g all-purpose flour

  • 1/2 tsp. baking powder

  • 1/8 tsp. salt

  • 76 g unsalted vegan butter (I like Country Crock plant-based olive oil butter)

  • 90 g granulated sugar

  • 80 g frozen blueberries

  • 70 g white chocolate chips

Directions

    Preheat your oven to 400F.

    Whisk together the flour, baking powder and salt.

    Thaw the frozen blueberries until they are soft and jammy.

    Let the blueberries cool for about 2-3 minutes.

    Cream together the butter and sugar.

    Add the blueberries to the butter and sugar and cream at a high speed.

    Gradually fold the dry ingredients in with the wet ingredients to form a dough.

    Mix in the white chocolate chips.

    Chill in the freezer for 30 minutes before shaping into 12 balls.

    Bake the cookies at 400F for 10-13 minutes or until slightly brown on the edges.
