Make-Ahead Freezer-Friendly Breakfast Burritos

Ingredients

  • 2 tbsp. avocado oil

  • green bell pepper (seeds and stem removed, diced)

  • 1/2 large yellow onion (diced)

  • 1 tsp. garlic powder

  • 1 tsp. chili powder

  • 16 oz. seasoned ground chicken sausage

  • 2 tbsp. butter

  • 10 eggs (whisked)

  • flour tortillas

  • 1 cup cheddar cheese

  • 1/2 tsp. fine sea salt

  • 1/4 tsp. fresh ground black pepper

    Heat olive oil over medium heat in a large/deep skillet.

    Add bell pepper, onion, garlic powder, and chili powder and cook for 3-4 minutes.

    Add ground meat and cook thoroughly.

    Remove the pan from heat and pour the meat and veggie mixture into a large bowl.

    Use a paper towel to wipe out your pan and return the pan to the heat.

    Add butter to the pan and add all eggs to the pan over the melted butter.

    Remove the eggs from the pan and set aside to cool.

    Let everything cool completely.

    Set up a burrito assembly line.

    Make 8 burritos, each with a sprinkle of cheese, 2 scoops of meat mixture and one big scoop of eggs.

    Wrap each burrito tightly in parchment paper or foil, then store in another airtight container or freezer bag.
