Cashew Cream Cajun Chicken Pasta - Dairy Free!

Ingredients

  • 3/4 cup raw cashews

  • 12 oz. gluten free pasta

  • 3 tbsp. olive oil (divided)

  • 1 lb. boneless skinless chicken breasts (cut into bite sized pieces)

  • 1/2 small small yellow onion (finely diced)

  • 1/2 large large red pepper (thinly sliced)

  • 1/2 large large yellow or orange pepper (thinly sliced)

  • 3 garlic (chopped)

  • 2 tbsp. tomato paste

  • 1 tsp. onion powder

  • 1 tsp. garlic powder

  • 1 tsp. dried oregano

  • 1 tsp. smoked paprika

  • 1/4 tsp. dried thyme

  • cayenne

  • 2 tbsp. Cajun seasoning

  • 1 1/2 cup broth

  • 2 tbsp. nutritional yeast

  • 1 1/2 tsp. salt (plus more to taste)

  • 1/2 tsp. black pepper (plus more to taste)

  • Parsley (to garnish)

Directions

    Soak raw cashews in boiled water for at least 30 minutes or up to an hour.

    Cook pasta according to package instructions and reserve 3/4 cup cooking water.

    Mix together dried spices.

    Cook chicken breast pieces with Cajun seasoning mix.

    Sauté veggies until tender.

    Add tomato paste and remaining Cajun seasoning.

    Blend soaked cashews with broth, nutritional yeast, salt, and black pepper.
